Founded originally as a brewpub, consumer demand soon necessitated wholesale production. This led Deschutes Brewery down a path of growth that has not slowed. 310 barrels were produced in the pub's first year of brewing. In 2001, with the help of a new brewing/production facility opened in 1993 and expanded this year, Deschutes will produce 102,000 barrels of some of the finest beer in the region (each barrel is equal to 31 gallons US).
Deschutes Brewery has grown because of the principle "quality first." Using the highest quality ingredients available, and taking more time and more care in the brewing process has made Deschutes' brews the favorite of fine ale connoisseurs throughout the Northwest and beyond. As Deschutes enjoys demand-driven growth, the commitment to maintaining quality is the number one priority. Our brewers make the beer they love to drink.
Deschutes' beers are characterized by their full flavor. They all maintain a distinctive mouthfeel and hop character.Some of our draught beers are unfiltered, whereas our Stout, ESB, Cascade Golden Ale and Jubelale are filtered & Kraeusened, as are some batches of our Porter and Pale. All of our bottled beer is filtered and then Kraeusened. Kraeusening is a traditional cross-generational brewing process, which results in a complex, full-bodied flavor with natural carbonation. The Kraeusening process begins when beer ready to be bottled is blended with a formulated amount of working wort (beer during the brewing process that is rapidly fermenting), and then bottled. Kraeusening builds back any flavor that may have been lost during filtration. It also consumes oxygen in the bottle, which is damaging to the beer. This is a long, painstaking process which most breweries choose not to use in making beer.
